Glycine aminoacetic acid, abbreviated Gly or G, is the smallest of the 20 protein amino acids. It is a white or light yellow crystal, soluble in water and has a sweet taste. The side bond of glycine is a hydrogen atom. Since its alpha carbon also has a hydrogen atom, glycine is not optically isomeric. Because glycine has very small side bonds, it can take up space that other amino acids cannot, such as as an amino acid inside the collagen helix. In some proteins (such as cytochrome, myoglobin, and hemoglobin) it changes relatively little over time because if a larger amino acid replaces it, the entire structure of the protein changes. Most proteins contain only a small amount of glycine, with the important exception of collagen, which contains one-third of glycine.
Glycine (Gly), also known as aminoacetic acid, is a non-essential amino acid with the chemical formula C2H5NO2. It is a white to off-white crystalline powder. It is easily soluble in water and almost insoluble in ethanol or ether. It is used in food, nutritional supplements, etc.
