1. Product Overview

Sodium benzoate (chemical formula: C6H5CO2Na), E number E211, is the sodium salt of benzoic acid. Sodium benzoate is an acidic preservative with good preservative effect in an acidic environment. It is a very commonly used food preservative, which can prevent deterioration and acidification and extend the shelf life. It is widely used in countries around the world. However, in recent years, concerns about its toxicity have limited its application. Some countries, such as Japan, have stopped producing sodium benzoate and imposed restrictions on its use.

Sodium benzoate is mostly white granules, odorless or slightly benzoin-scented, slightly sweet, and astringent; it is easily soluble in water (normal temperature) at about 53.0g/100ml, and the pH is about 8; sodium benzoate is also an acidic preservative, and has no bactericidal or antibacterial effect in alkaline media; its best pH for preservation is 2.5-4.0, and the bactericidal effect of a 5% solution at pH 5.0 is not very good. Sodium benzoate has a high lipophilicity and can easily penetrate the cell membrane into the cell body, interfering with the permeability of the cell membrane and inhibiting the absorption of amino acids by the cell membrane. It enters the cell body and ionizes and acidifies the alkaline storage in the cell, inhibits the activity of the cell's respiratory enzyme system, and prevents the condensation reaction of acetyl coenzyme A, thereby achieving the purpose of food preservation.
